Ingredients:
- Cooked Mussel Meats
- Rice
- Vegetable oil
- Chopped onion
- Garlic
- Pepper
- Basil or parsley
Directions:
Into a frying pan, heat some vegetable oil on medium/high heat, add the mussels and cook for about 2 minutes, remove from the pan and set aside.
Heat the oil in a large saucepan and soften the chopped onion for 6-7 mins. Add the pepper and garlic, cook for 2 minutes more, then stir in the rice and cook for 1 min, stirring to coat. Pour in the stock and bring to the boil. Cook, uncovered, at a gentle bubble, for 20 mins, stirring occasionally until the rice is tender.
Put the mussels back in the pan just to re-heat and sprinkle with basil or parsley. Serve in warm bowls scattered with the parsley.
